The weekend is over. Those lovely relaxing couple of days are finished. Back to reality it is.
To me Monday is an absolute hell. I can get no sleep whatsoever on the night from Sunday to Monday. Resulting in me being only semi-awake all day. Which does not make me or anyone around me very happy.

What would we like then, when we are in such a terrible mood? Something sweet. Something easy. Something which is healthy but isn’t time-consuming healthy. Thus, the Strawberry Avocado Smoothie was born. The honey, strawberries and banana bring this delicate sweet flavor to the mix. While the avocado is so creamy and smooth (oooh, so that’s where the name of the drink comes from). In the meantime, you’re also drinking almond milk! Honestly, I got this carton of milk for free somewhere, tried it and did not like it at all. However, I didn’t want to let it go to waste. Therefore, in the recipe, you might find that it is a bit too sweet for your taste, because I kind of tried to mask the almond milk flavour. If so, or if you do like almond milk plain, just leave out some strawberries or some honey.
In addition, I do find this smoothie perfect to people who are lactose-intolerant, or who just don’t react to great to dairy -such as myself. For me, that is a great reason to use the almond milk more.
Now then, enjoy this energy-giving, vitamin-boosting smoothie and rock this Monday!!
